Sweet Potato Spoon bread
| 4 or 5 sweet potatoes, grated |
| rind of 1 lemon |
| rind of 1/2 orange |
| 4 eggs beaten |
| 1 1/2 cup honey |
| 3/4 cup oil |
| 1/2 tsp. nutmeg |
| 1/2 tsp. cinnamon |

| Mix first three ingredients well. beat the eggs until
frothy. Continue beating adding honey in a fine stream. Add oil slowly
beating until smooth. Add grated mixture to egg mixture. Add nutmeg
and cinnamon: mix well. Pour into oiled baking dish. Bake at 325 deg
for one hour. serve either hot or cold with ham or chicken. |
