Orange and Lemon Beets

3 lbs fresh beets 
1/4 cup lemon juice 
1/2 cup orange juice
2 Tbsp. wine vinegar
2 Tbsp. honey
1 1/2 Tbsp. corn starch
1/4 cup butter
1/2 tsp. grated orange peel (optional)
1/2 tsp. grated lemon peel (optional)
Prepare, cook, drain and slice fresh beets into 1/4" slices.  If canned, sliced beets are used.  Drain well.  In a saucepan, combine fruit juices, vinegar, honey, corn starch and seasonings.  Stir until smooth.  Bring to a boil, stirring; continue cooking until sauce is thick and clear.  Add beets, butter and fruit peel.  Heat to serving temperature.  Serves 6.
