Honey-Sauced Beets
| 2 cup diced or sliced beets |
| 1 Tbsp. corn starch |
| 1/2 tsp. salt |
| 1 Tbsp. water or beet juice |
| 1/4 cup honey |
| 1 Tbsp. butter or margarine |
| 2 Tbsp. red vinegar |

| Heat beets, drain. Mix corn starch and salt, blend in
water or beet juice. Add honey, butter or margarine and
vinegar. Cook over low heat, stirring constantly until thick.
Add sauce to beets and let stand 10 minutes to absorb flavors.
Reheat. Serves 4 to 6. |
