Honey-Buttered Carrots
| 2lbs carrots |
| 1/2 cup butter |
| 1/4 cup honey |
| 1 to 1 1/2 tsp. orange peel |

| Cook carrots until tender in salted water, drain. Whip
the butter until light and fluffy. Gradually add the honey, beat
smooth. Stir in orange peel. Serves over carrots. The
sauce is also delicious over, beets , waffles or pancakes. |
