Citrus Honey Carrots
| 1 bunch carrots |
| 1 pinch salt |
| 1/4 cup melted butter or margarine |
| 1/4 cup honey |
| 1 1/2 tsp. grated orange peel |
| 1 1/2 tsp. grated lemon peel |
|
| Wash and
scrape carrots. Cook in 1 inch of boiling water until crispy tender, about
15-20 minutes. Drain. Blend melted butter, honey, and citrus peels. pour
over cooked carrots and place over low heat until carrots are thoroughly
glazed. Makes 4 servings. |
